yes for yoghurt!

Having a sweet tooth and my love of baked goods I know I have to draw the line somewhere and be conscious of my sweets intake of else... and so I have always been on the lookout for 'healthy' baked goods recipe and this is my newest find. Yoghurt Bread ingredients: - 1 egg - 1 cup plain yogurt - 1/4 teaspoon salt - 1/4 cup vegetable oil - 1/4 cup melted butter - 1/4 cup sugar - 1 packed tablespoon brown sugar - 1 teaspoon vanilla - 1/2 teaspoon baking soda - 1 teaspoon baking powder - 1 1/4 cup flour - 1 tablespoon pain yogurt - 1 tablespoon powdered sugar - 1/4 teaspoon vanilla how to: - Preheat your oven to 375 F and get out a mixing bowl. Whip together the yogurt, egg, oil, salt, sugars, and melted butter. Sprinkle in the baking soda and baking powder and then slowly add the flour. avocado advocate!

Avocado isn't in my top favorite fruit list but I have recently 'rediscovered' it and have developed a great liking to it. When we were kids the only way we consume avocado is by topping slices of it with sweet condensed milk and crushed ice, in an ice blended drink or homemade frozen pops. I guess the reason why I did not like it so much is that it is green, easily turns a dark color and becomes mushy (combine that with thick milk and I tell you it does not look appealing). Recently though I have began putting avocadoes in salads and sandwich wraps. Wanting to cook something easy a few days back, I decided to make chicken finger wraps with avocado, lettuce and tomato. I sort of made two mis-steps in making these 'monkey bars' that they turned out be more like banana bread than bars. First I forgot to add the sugar and only just remember after I had poured the batter into a (second boo boo here) smaller baking pan so the batter cooked much thicker than bars should. Monkey Bars or Banana Bread ingredients: - about 5 bananas  mashed ripe bananas - 3/4   cups    packed light-brown sugar - 1/4   cup    oil - 1/4   cup    milk - 2    eggs - 2   teaspoons  vanilla extract - 1   teaspoon  each baking soda and cinnamon - 1/4   teaspoon salt - 1 3/4   cups  white whole-wheat flour - 1   cup  mini chocolate chips how to: - h eat oven to 350ºF. summer is here and what better way to cool down that lazinf around with your favorite drink. I am still hung over making jello (still - because the last experiment I did was a failure *sniff*) so armed with new vigor I decided to make coffee flavored jelly which I will then add to a cold mocha drink. Mocha Coffee Jelly Cooler ingredients: - 2 packets 3 in 1 (cream, coffee and sugar) coffee mix - 2 packets black coffee mix - 1 packet unflavored clear gelatine powder - enough water as called for in the coffee mix - a few squirts of chocolate syrup - milk - sugar to taste how to: - prepare the jelly as per package directions and flavoring it with the packets of black coffee. Chill until set. Cut into cubes when set - prepare the drink by dissolving the packets of 3 in 1 coffee mix in half a cup of hot water, add a cup of water and half a cup of milk to make two cups. - add chocolate syrup and sugar according to your taste. chill. - to assemble, fill half

dressing up desserts

I had just purchased a half gallon tub of ice cream and wanted to dress it up by making waffle cups. I knew it is made of the same batter as pancakes but without a waffle cone or cup maker I have a general idea on how I can make it into a basket shape and make it crispy. So I started by making pancake batter (again feeling lazy I used boxed mix) and thinned it bit with a little more milk. I cooked them as you would a pancake but since it was a thin batter you have to be careful in flipping it as it is more delicate.  When it has cooked I arranged them on an inverted slightly greased muffin pan then I bake them at 100 degrees until they were crispy - I did not want to bake them at higher temperature for fear of burning them so I baked at a lower temperature for longer time. dessert time!!!!

lets go a rolling!

I was about to make lasagna this last weekend only to find out that I only had a few sheets of lasagna noodles left - only four actually and with laziness creeping in I decided against going to the grocery and decided to make lasagna roll-ups instead. So I cooked the noodles as per package directions and made basic meat sauce - and by basic I meant adding half a bottle of spaghetti sauce over sauteed quarter kilo of ground beef letting it simmer for 5-10 minutes. When done, spooned the meat sauce on one end of the lasagna noodles and rolled it up. Spooned the remaining sauce over the noodle rolls, topped it with cheese and baked until the cheese is bubbly and melted - which is about 5 minutes in a 150 degree oven. and viola lasagna rolls!
