blooms in the kitchen

I really do love having days off from work! it give me time to experiment in the kitchen and today I made a version of Outback Steakhouse's Blomming Onion. I found the recipe on Pinterest and decided it would be a great side from my sweet and spicy fried chicken and potato salad dinner, yep thursday night's dinner is a fry fest.

It was a bit tricky to separate the 'petals' but I did the best I could without ruining the onion. The photos don't give much justice but I was thrilled with the result - it looked so pretty and it was yummy and chrunchy too! beats having to fry one onion ring at a time!

Bloomin' Onion
ingredients:
- 4 medium white or brown onions

Batter:
- 1/3 C. Cornstarch
- 1 1/2 C. Flour
- 2 tsp. Garlic -- minced (I used garlic powder)
- 2 tsp. Paprika
- 1 tsp. Salt
- 1 tsp. Pepper
- 24 oz. Beer (I didn't have beer so I just used water)

Seasoned Flour:
- 2 C. Flour
- 4 tsp. Paprika
- 2 tsp. Garlic powder
- 1/2 tsp. Pepper
- 1/4 tsp. Cayenne pepper

how to:
-  Mix cornstarch, flour, and seasonings until well blended. Add beer or water mix well. Cut about 3/4" off top of onion and peel.

Cut into onion 12 to 16 vertical wedges, but do not cut through bottom root end. Remove about 1" of petals from center of onion. Dip onion in seasoned flour and remove excess by shaking. Separate petals and dip in batter to coat thoroughly.

- Gently place in fryer basket and deep-fry at 375 to 400 1 1/2 minutes. Turn over, and fry an additional 1 1/2 minutes.  Drain on paper towels. Serve with your favorite dip.
