easy ube cupcake

I am still on a ube high! The last time I went grocery shopping, I kind of went crazy and  bought a lot of purple yam for my ube cheese pandesal project and now that I have successfully made those little cheesy babies I still have much ube left so its on to a new project! Ube Cupcakes Ingredients: 2 large eggs, room temperature ¾ cup sugar ½ cup vegetable oil 1 cup ube jam 1½ teaspoon ube flavoring 1 cup cake flour 1 teaspoon baking powder ½ teaspoon salt 1 cup ube jam thinned a bit with milk for frosting how to: - preheat oven to 325 F. and prepare cupcake pan with cupcake liners - in a large bowl beat eggs, sugar, oil and ube halaya - add to dry ingredients and mix just until incorporated - fill cupcake pan about 3/4 full and bake for 12 mins or until toothpick inserted comes out clean - frost with ube jam thinned a bit with milk until of spreading consistency. enjoy!

Serah Nicole's Christening goodies

My friend requested that I make cupcakes for her daugther's cristening, I have posted a Serah project plan board a few days ago but some of my plans didn't quite come out successfully. The supposedly pink starberry flavored cupcakes did not stay pink after baking and I didn't have enough time to make the rainbow cookies. I have decided also, to go stawberry on stawberry and chocolate on mocha, that way the flavors won't be confusing to kids who will be at the party. what a party animal!

This is the recipe for the second kind of cupcakes I made for Shan's Birthday. I made chocolate cupcakes - a dessert buffet won't be complete with out chocolate, and added a touch of funny by making monkey faces with cookies. Monkey Cupcakes Ingredients: - 2 cups all-purpose flour - 2 cups white sugar - 3/4 cup unsweetened cocoa powder - 2 teaspoons baking soda - 1 teaspoon baking powder - 1/2 cup vegetable oil - 1 cup milk - 2 eggs - 1 teaspoon vanilla extract - 1 cup hot milk - ready made red gel writing icing - mini M&M's - small drop cookies - store bought or homemade chocolate frosting How to:   - Preheat oven to 350 degrees F (175 degrees C).  Line muffin pan with paper cups - In a large bowl, stir together the flour, sugar, cocoa, baking powder, and baking soda. Add the oil, milk, eggs, and vanilla, mix until smooth. Stir in the hot milk last. pour into prepared pan.   - Bake in the preheated oven for 20 to 25 minutes, or until a t...

My godson Shan had just celebrated his 2nd birthday, and as a gift I made rainbow and chocolate monkey (recipe on the next post) cupcakes for his dessert buffet. Rainbow Cupcakes Ingredients: 1 and 1/4 c. plus 1 tbsp. of cake flour 1 tsp. of salt 3/4 c. of vegetable oil 3/4 c. of sugar 1 large egg 1/2 c. of buttermilk 1 tsp. vanilla extract (optional) 3/4 tsp. of baking soda 1 tsp. of white vinegar food colors How to: - Line a 12-hole muffin pan with cupcake liners - Preheat the oven to 350F  - Sift together the flour and salt. - Beat the oil and sugar. Add the egg and beat until incorporated. - Add the flour and buttermilk alternately by thirds mixing well after each addition. If using vanilla extract, stir it in. - Mix together the baking soda and vinegar (it will fizzle). FUN-dant!!!

I have been longing to experiment with fondant for a while now - and today I finally did!! I didn't make it from scratch because all those cups of powdered sugar required intimidates me so when I saw ready made fondant icing on sale I grabbed a pack!!! perfect for birthday cupcakes I plan to give my very good friend connie!!! It was like playing play-doh and is was soooo much fun!!!!!
