the domed cookie!

I've never met a cookie I didn't like, and yes I love even the 'healthy ones', and while a plate of freshly baked cookies brings comfort like a warm hug kicking your cookie up a notch is like a warm hug and a kiss on top of the head! Cookie Dome Cake Ingredients: - cookies - milk - chopped chocolate - 1 small pack all all purpose cream - nuts, sprinkles etc for topping how to: - heat cream in a small saucepan - pour over chocolate, let sit for a few minutes and stir until chocolate is melted and smooth. set aside - line bowl with cling wrap - dip cookies in milk and arrange in single layer in the bottom and along sides of the bowl - top with chocolate cream and your choice of toppings - alternate layers - chill for a few hours - invert unto a bowl and cover with remaining chocolate cream and toppings. yummeeehh!!!!

you'd never guess the secret ingredient to this healthy cookies! - well maybe you would, in anycase I'm telling!!!! it's chickpeas! - not the first thing that come to mind right??!! I really really do have a sweet tooth and am always on the lookout for healthier versions of cookie, cupcake and brownie recipes to satisfy my cravings without (much) guilt. This is one of my newest fave.

Serah Nicole's Christening goodies

My friend requested that I make cupcakes for her daugther's cristening, I have posted a Serah project plan board a few days ago but some of my plans didn't quite come out successfully. The supposedly pink starberry flavored cupcakes did not stay pink after baking and I didn't have enough time to make the rainbow cookies. I have decided also, to go stawberry on stawberry and chocolate on mocha, that way the flavors won't be confusing to kids who will be at the party. the hunt for healthy cookies

I love to eat - I love to eat sweets and baked goods more specifically and if only all those calories don't go straight to my thighs, hips and tummy I would be eating them all day. It unfortunately isn't so thus I am always on the lookout for better recipes that call for less butter and sugar. I found this 'healthier' version of an oatmeal cookie that uses banana to cut the fat - it still requires a cup of sugar though so until I find a better healthier sugar substitute (honey maybe?!) am sticking to this one. When I heard that my friend who gave birth to a healthy baby girl a couple of weeks ago was going to visit the office to sort out her planned extended vacation I immediately thought of baking something as a present for them. I have not visited as often as would have liked because I don't really know when would be a good time, I am sort of worried to be a nuisance when she could be sleeping or spending time with her kids. I know she must be tired with having a newborn baby and a three year old son to take care of so I felt that I should postpone my visit until she has settled on her routine. I first though of trying out that no yeast cinnamon bread recipe that I found but decided to make chocolate chip cookies instead. Nothing beats the comfort of homemade cookies with milk, tea or coffee. The whole house feels very homey with the wonderful aroma of the baking cookies, putting you into a relaxed kind of mood.
