something to make you chipper

When I heard that my friend who gave birth to a healthy baby girl a couple of weeks ago was going to visit the office to sort out her planned extended vacation I immediately thought of baking something as a present for them. I have not visited as often as would have liked because I don't really know when would be a good time, I am sort of worried to be a nuisance when she could be sleeping or spending time with her kids. I know she must be tired with having a newborn baby and a three year old son to take care of so I felt that I should postpone my visit until she has settled on her routine.

I first though of trying out that no yeast cinnamon bread recipe that I found but decided to make chocolate chip cookies instead. I made 2 batches actually - one with chocolate chips and almonds for the grown-ups and one with M&M's for my godson - her three year old son, to gobble up on. 

Chocolate Chip Cookies
ingredients:
- 1/2 cup softened butter
- 1/2 cup white sugar
- 1/2 cup packed brown sugar
- 1 egg
- 1 tsp vanilla extract
- 1/2 tsp baking soda dissolved in 1 tsp hot water
- 1 1/2 cup flour
- 1/4 tsp salt
- 1 cup chocolate chips and or M&M's
- 1/2 cup chopped almonds

how to:
- Preheat oven to 350 degrees F (175 degrees C).               
- Cream together the butter, white sugar, and brown sugar until smooth. Beat in the egg then stir in the vanilla. Dissolve baking soda in hot water. Add to batter along with salt. Stir in flour, chocolate chips, and nuts. Drop by large spoonfuls onto ungreased pans.                
- Bake for about 10 minutes in the preheated oven

wowwweee a few pieces left for my afternoon tea!!!

I have always like my cookies soft and chewy, and these turned out the way I liked it. I was scared that they would be undercooked so I watched carefully and took them out of the oven just when the edges are browned. I figured if they were undercooked or if I decided to make a few of them crispy, I could just pop them back into the oven to bake for a couple more minutes.

    I tend to make my multi-coloured ones with Smarties, but I will defiantly give M&Ms a go.

dressing up desserts

I had just purchased a half gallon tub of ice cream and wanted to dress it up by making waffle cups. I knew it is made of the same batter as pancakes but without a waffle cone or cup maker I have a general idea on how I can make it into a basket shape and make it crispy. So I started by making pancake batter (again feeling lazy I used boxed mix) and thinned it bit with a little more milk. I cooked them as you would a pancake but since it was a thin batter you have to be careful in flipping it as it is more delicate.  When it has cooked I arranged them on an inverted slightly greased muffin pan then I bake them at 100 degrees until they were crispy - I did not want to bake them at higher temperature for fear of burning them so I baked at a lower temperature for longer time. dessert time!!!!
