pig-out thursdays

It has become our habit to cook a special menu every thursday for dinner. As the last working of the week (where I am currently based at least) we sort of 'celebrate' and welcome the weekend with a good dinner. Sometimes we go out and eat but with the changing work schedule of my brother I just cooke and usually make something akin to restaurant fare and tonight I made honey-garlic baked ribs with a side of coleslaw and onion rings.

Honey-Garlic Baked Ribs
ingredients:
- a slab of your choice of ribs
- olive oil
- minced garlic
- brown sugar
- salt and pepper
*the amount of garlic, olive oil and brown sugar will depend on how big your slab of meat is

how to:
-  season the ribs with a bit of salt and pepper
- rub the minced garlic all around the ribs and sprinkle more on top
- drizzle with olive oil
- sprinkle with brown sugar
- bake loosely covered with foil of 30 minutes in a 250F oven and broil for another 15 minutes in a 150F oven until top is browned.

getting Stuffed!

I my house no leftovers are never wasted - we dress them up or 'reinvent' them into new dishes for the next meal, such is the case when I made these stuffed bell peppers. I had a couple of cups of  leftover rice in the fridge along with a slice of steak and mixed veggie sidings from the steak dinner we had the previous night. I wanted to make it like a java rice but didn't have the turmeric powder needed to color the rice yellow so I used the curry powder I had instead and liked the mild spicyness flavor it gave the rice. whenever I don't feel like slaving too much in the kitchen and want something fast and cheap, my go to option is to get a whole Roasted Chicken. Yep, we love our chicken, but you got to admit sometimes store bough roast can be a tad bland and dry. In cases like this I dress it up a bit and throw in some veggies and a sauce to give it more flavor and liven it up.
