something to make you chipper

When I heard that my friend who gave birth to a healthy baby girl a couple of weeks ago was going to visit the office to sort out her planned extended vacation I immediately thought of baking something as a present for them. I have not visited as often as would have liked because I don't really know when would be a good time, I am sort of worried to be a nuisance when she could be sleeping or spending time with her kids. I know she must be tired with having a newborn baby and a three year old son to take care of so I felt that I should postpone my visit until she has settled on her routine.

I first though of trying out that no yeast cinnamon bread recipe that I found but decided to make chocolate chip cookies instead. I made 2 batches actually - one with chocolate chips and almonds for the grown-ups and one with M&M's for my godson - her three year old son, to gobble up on. 

Chocolate Chip Cookies
ingredients:
- 1/2 cup softened butter
- 1/2 cup white sugar
- 1/2 cup packed brown sugar
- 1 egg
- 1 tsp vanilla extract
- 1/2 tsp baking soda dissolved in 1 tsp hot water
- 1 1/2 cup flour
- 1/4 tsp salt
- 1 cup chocolate chips and or M&M's
- 1/2 cup chopped almonds

how to:
- Preheat oven to 350 degrees F (175 degrees C).               
- Cream together the butter, white sugar, and brown sugar until smooth. Beat in the egg then stir in the vanilla. Dissolve baking soda in hot water. Add to batter along with salt. Stir in flour, chocolate chips, and nuts. Drop by large spoonfuls onto ungreased pans.                
- Bake for about 10 minutes in the preheated oven

I have always like my cookies soft and chewy, and these turned out the way I liked it. I was scared that they would be undercooked so I watched carefully and took them out of the oven just when the edges are browned. I figured if they were undercooked or if I decided to make a few of them crispy, I could just pop them back into the oven to bake for a couple more minutes.

    I tend to make my multi-coloured ones with Smarties, but I will defiantly give M&Ms a go.

The most egg-cellent sandwich ever!

Simple ingredients does not mean boring sandwiches! Japanese Egg Sandwich Ingredients: - 3 soft boiled eggs, peeled - 1 1/2 tbsp. mayonnaise - 1/4 tsp Dijon mustard - 2 sliced sandwich bread - 1 cup shredded cabbage (wilted with a pinch of salt) *** optional - salt and pepper to taste how to: - chop 1 egg and combine with mayo, mustard, salt and pepper in a bowl - spread over a bread slice, top with the remaining 2 whole egg - top with wilted cabbage - cover with remaining bread slice pressing slightly to hold the shape. - slice and serve

beefy buns

Nothing goes well with a big bowl of hot and hearty beef noodle soup than soft and fluffy steamed buns!  This dish reminds me of my childhood fascination of the vibrancy of a busy marketplace. During summer vacation, before going to work, my mom would take us to the market to buy our meals for the day and the corner noodle shop was often than not our main stop.
