tale of the coonies!

… adapted from various versions of no bake cookies – I 'developed' my own recipe making use of surplus glucose cookies, milk and chocolates…
… these treats are called “coonnies”. Named after my friend connie – they are a cross between brownies and cookies, depending on how you bake them – they can be baked in a pan and cut into squares which would make them like brownies or you can drop them by the spoonfuls onto baking sheets which will make them like cookies.
 … well this is more of a guide than a recipe because when I make these easy chocolatey treats I just play it by hand – I can’t give you the exact measurements or cooking time and the ingredients differ according to what you want to put in!!!  
… you can get really creative with it! – you can add any type of nuts you want, you can add a bit of coffee for added flavor, you can bake them either crunchy or chewy, chunky or smooth… no restrictions!!
… We – that is to say connie’s then boyfriend now husband came up with the name when he asked me to give him the recipe for the ‘sweets’ I made for them previously so he could make some and surprise connie on their anniversary. I guess he had a hard time following my non recipe but it all turned out good – the coonies and the anniversary!!

Coonies
Ingredients:
- 1 can condensed milk
- glucose cookies or chocolate graham crackers
- chocolate morsels (about 2 cups)
- one packet insant coffee dissolved in 2 tbsp hot water
- nuts (optional) 


How to:
- In a heavy sauce pan heat condensed milk in low heat with little butter for about 5 minutes add coffee mixture and part of the chocolate morsels. let cool
- Roughly crush the cookies - having uneven cookie pieces adds to the ''chunk" add to the milk and mix until cookies are moistened.
- Add the rest of the chocolate morsels and or nuts
- Drop by spoonfuls onto cookie sheet or pour onto baking pan and bake for about 10 minutes - longer baking time makes cookies crunchier and less makes it gooey-chewy

dressing up desserts

I had just purchased a half gallon tub of ice cream and wanted to dress it up by making waffle cups. I knew it is made of the same batter as pancakes but without a waffle cone or cup maker I have a general idea on how I can make it into a basket shape and make it crispy. So I started by making pancake batter (again feeling lazy I used boxed mix) and thinned it bit with a little more milk. I cooked them as you would a pancake but since it was a thin batter you have to be careful in flipping it as it is more delicate.  When it has cooked I arranged them on an inverted slightly greased muffin pan then I bake them at 100 degrees until they were crispy - I did not want to bake them at higher temperature for fear of burning them so I baked at a lower temperature for longer time. dessert time!!!!

caramel apples!!!

I grew up in a country where Halloween isn't really celebrated with all the hoopla of jack-o-laterns, halloween parties and trick or treating... the highlight of my childhood halloween was a contest amongst us kids on who can make the biggest ball of wax from candle drippings and the occasional scary story... ...  6 Granny Smith apples 6 wooden sticks 1 (14 ounce) package individually wrapped caramels, unwrapped 2 tablespoons water 1/2 teaspoon vanilla extract 1 1/2 tablespoons coarse sea salt 1 cup semisweet chocolate chips
