mock mock!


I have forever been wanting to bake the ultimate chocolate cheesecake but the recipe intimidates me – it’s such a delicate dessert. I’ve checked various recipes from the baked and no bake versions but there seems to be no foolproof recipe. The instructions read easy enough but I’m just scared I’ll waste all the cream cheese.
One otherwise boring day, I went a lookee in the fridge and found graham crackers, a couple packages of all purpose cream and suddenly an idea took over. I, then and there decided to make a ‘mock chocolate cheesecake’!! – it was like a practice run until I get the guts to make the real thing and hey it turned out fairly ok if I may say so!

Mock Chocolate Cheesecake
Ingredients:
- ½ cup butter
- 1 ¾ cup finely crushed chocolate graham crackers
- ½ cup flour
- Sugar
- 1 package all purpose cream
- 1 cup Chocolate chips


How to:
- Preheat oven to 350 degrees. Lightly grease a medium square baking pan. Set aside
- For crust, in small saucepan heat butter until light brown. Remove from heat and set aside
- Combine together graham crackers, flour and sugar. Stir in butter until combined. Evenly press on bottom of prepared pan. Bake 8-10 minutes
- Meanwhile, in a saucepan heat cream over low heat for 5 minutes, remove from heat and stir in half cup of chocolate chips until melted. When cooled pour over crust. Sprinkle with remaining chocolate chips
- Bake 15 to 20 minutes or until center becomes set. Cool and cut into bars

VARIATIONS:

can be brownie or cake base - bake brownie or cake from a box as directed and proceed to step 4!!!

pudding new life to stale bread!

In this time where there can be shortage of food supplies, we can not afford for anything to go to waste - which is the norm in our household in any case. Today while checking out our ref I found 2 left over buns from last week's lunch. beefy buns

Nothing goes well with a big bowl of hot and hearty beef noodle soup than soft and fluffy steamed buns!  This dish reminds me of my childhood fascination of the vibrancy of a busy marketplace. During summer vacation, before going to work, my mom would take us to the market to buy our meals for the day and the corner noodle shop was often than not our main stop. We would order a couple of servings of beef noodles and steamed buns... I would often discreetly watch the people inside the shop - fascinated by the diversity of the patrons coming and going.
