bite me!!!


I learned about cake bites and cake pops about a year ago and I thought they were just amazing! I mean cake, chocolate and candy rolled into one what could be better??!!

I have actually made a 'version' of these bite size babies long before they became popular - I baked a cake that sadly was undercooked in the middle. It was useless for my planned layer cake but I didn't want to waste it so I rolled them into balls and dipped it in melted chocolate. They were yummy! not a hint of a failed cake bite after bite!

It became my favorite sweet treat to make for occassions - and today I had just finished making a couple dozens of cake balls for a friend who was craving for them after she finished the packages I gave her last Christmas.


Cake Balls
Ingredients:
- home made or store bought cake 
- home mad or store bought frosting
- candy coating or chocolate melted as per package directions
- candy sprinkles

How to:
- reduce cake to crumbs
- mix cake crumbs with frosting a few tablespoons at a time, just enough to moisten the cake for it to be able to hold its shape
- roll cake into balls, chill for 30 mins
- dip in melted chocolate or candy coating
- decorate with candy sprinkles


this is a very flexible treat and can be made in a variety of flavors - I have tried using nutella and melted caramel instead of frosting and it turned out great! try experimenting today!

getting Stuffed!

I my house no leftovers are never wasted - we dress them up or 'reinvent' them into new dishes for the next meal, such is the case when I made these stuffed bell peppers. I had a couple of cups of  leftover rice in the fridge along with a slice of steak and mixed veggie sidings from the steak dinner we had the previous night. I wanted to make it like a java rice but didn't have the turmeric powder needed to color the rice yellow so I used the curry powder I had instead and liked the mild spicyness flavor it gave the rice. whenever I don't feel like slaving too much in the kitchen and want something fast and cheap, my go to option is to get a whole Roasted Chicken. Yep, we love our chicken, but you got to admit sometimes store bough roast can be a tad bland and dry. In cases like this I dress it up a bit and throw in some veggies and a sauce to give it more flavor and liven it up.
