potato potato!!!

wanted something akin to potato chips for our chicken dinner but was weary of frying because first I was hungry and wanted something fast - frying takes soo much time and second I didn't want any more oil into our meal so I made these: Hasselback Potato Ingredients: 2 large potatoes salt pepper butter How to: - slice washed potatoes across without going all the way through about a quarter of inch apart - microwave potatoes on high for 15-20 minutes depending on your oven wattage or until fork tender - smear with butter and season with salt and pepper - bake a few minutes in a 375 degree oven until tops are nicely browned    perfect with southern fried chicken!!! You can bake it directly in the oven, seasoning between two or three intervals if you have time, but microwaving it saves time so you can get to your chicken dinner faster!

tale of the coonies!

… adapted from various versions of no bake cookies – I 'developed' my own recipe making use of surplus glucose cookies, milk and chocolates… … these treats are called “coonnies”. Named after my friend connie – they are a cross between brownies and cookies, depending on how you bake them – they can be baked in a pan and cut into squares which would make them like brownies or you can drop them by the spoonfuls onto baking sheets which will make them like cookies.   … well this is more of a guide than a recipe because when I make these easy chocolatey treats I just play it by hand – I can’t give you the exact measurements or cooking time and the ingredients differ according to what you want to put in!!!   … you can get really creative with it! – you can add any type of nuts you want, you can add a bit of coffee for added flavor, you can bake them either crunchy or chewy, chunky or smooth… no restrictions!! … We – that is to say connie’s then boyfriend now husba...

mock mock!

I have forever been wanting to bake the ultimate chocolate cheesecake but the recipe intimidates me – it’s such a delicate dessert. I’ve checked various recipes from the baked and no bake versions but there seems to be no foolproof recipe. The instructions read easy enough but I’m just scared I’ll waste all the cream cheese. One otherwise boring day, I went a lookee in the fridge and found graham crackers, a couple packages of all purpose cream and suddenly an idea took over. I, then and there decided to make a ‘mock chocolate cheesecake’!! – it was like a practice run until I get the guts to make the real thing and hey it turned out fairly ok if I may say so! Mock Chocolate Cheesecake Ingredients: - ½ cup butter - 1 ¾ cup finely crushed chocolate graham crackers - ½ cup flour - Sugar - 1 package all purpose cream - 1 cup Chocolate chips How to: - Preheat oven to 350 degrees. Lightly grease a medium square baking pan. Set aside - For crust, in small saucepan heat butter u...
