mochi!!!

When I went for vacation in the Philippines a few months back, there are all sorts of new food trends and one of them is mochi ice cream balls. I decided to try them out one day but was surprised by the crazy expensive price tag so I decided to forego it and bought my self a real ice cream treat instead.
 
A couple of weeks ago I came across a mochi ice cream ball recipe and could not believe how simple the ingredients are and how easy it seems to make. All I needed was glutinous rice powder, water, sugar, food coloring and ice cream - all of which I have on hand so its experiment time!!!

Mochi Ice Cream Balls
ingredients:
- 1 cup glutinous rice powder
- 1/2 cup or more water
- 2 tbsp sugar
- a few drops of food color you want
- ice cream of your choice

how to:
- scoop the ice cream into small balls and re-freeze until hard
- mix the glutinous rice powder, sugar and food color in a bowl
- gradually add water until mixture resembles thick batter
- microwave for 2 minutes, take out mix it and microwave for another 30 sec
- let cool enough to handle
- roll into balls and flatten into disks
- wrap disks into the ice cream balls and seal by pinching
- return to freezer until firm

getting Stuffed!

I my house no leftovers are never wasted - we dress them up or 'reinvent' them into new dishes for the next meal, such is the case when I made these stuffed bell peppers. whenever I don't feel like slaving too much in the kitchen and want something fast and cheap, my go to option is to get a whole Roasted Chicken. Yep, we love our chicken, but you got to admit sometimes store bough roast can be a tad bland and dry.
