lick 'em good!

I am never really fond of cooking fried chicken. For one I think deep frying is unhealthy and a waste of too much oil and second the process just takes too long (for me) because you have to fry the chicken pieces (particularly the leg and thigh part) in low heat to make sure it gets cooked thoroughly. Sometimes, just for good measure, I wrap the chicken in foil and broil it in the oven for 10-15 minutes.

Some people I know pre-boils the chicken before frying, while there is nothing wrong with this method, I kind of think the chicken gets dried out when you fry it after boiling.

Browsing the net, I chance upon this recipe which 'second-cooks' fried chicken in a combination of soy sauce, honey and lemon - resulting in a perfectly cooked finger licking chicken!!!

Sweet n Spicy Finger Lickin' Chicken
Ingredients:
half a kilo of chicken pieces (leg and thigh part)
1/4 cup of soy sauce
1/8 cup of lemon juice
1/4 cup of honey
2 pcs birds eye chili chopped (more depending on your taste)
1 tsp chopped garlic
1 tsp chopped onions
chopped spring onions for garnish
salt
pepper
flour

How to:
- combine soy sauce, lemon, honey, chili and 3/4 cup of water in a bowl. set aside 
- season the chicken pieces in salt and pepper
- dredge in flour to coat
- fry chicken until golden brown. set aside
- in the same pan, remove excess oil and fry onion and garlic
- pour in honey soy sauce mixture and bring to a gentle boil
- place chicken pieces in a single layer, cover and simmer in low heat for 15-20 minutes turning chicken pieces once to cook and coat both sides in sauce

perfect with steamed white rice and a side of garden salad!

Nothing goes well with a big bowl of hot and hearty beef noodle soup than soft and fluffy steamed buns!  This dish reminds me of my childhood fascination of the vibrancy of a busy marketplace. During summer vacation, before going to work, my mom would take us to the market to buy our meals for the day and the corner noodle shop was often than not our main stop. whole-y moley wheat bread!!!

 I have been trying to master making bread using whole wheat flour, my first attempt was a complete failure even though I followed the recipe exactly. I don't know where I went wrong but the 'bread' didn't rise even after a couple of hours. I still went n to bake it and though it was edible to texture was not fluffy as shown in the you tube video tutorial but very dry and crumbly - almost like the puto seko of my childhood...  I continued to search for recipes and finally decided on combining methods from 2 recipes - and it was a success!
