caramel apples!!!

 more whole wheat goodness with these home made crackers! the best part of this is you can add any flavor topping you want - you get a whole lot of variety from preparing 1 batch of dough.... perfect with hummus and some veggie sticks for a quick healthy snack. I imagine it would be a great addition to your charcuterie board too! whole-y moley wheat bread!!!

 I have been trying to master making bread using whole wheat flour, my first attempt was a complete failure even though I followed the recipe exactly. I don't know where I went wrong but the 'bread' didn't rise even after a couple of hours. I still went n to bake it and though it was edible to texture was not fluffy as shown in the you tube video tutorial but very dry and crumbly - almost like the puto seko of my childhood...  I continued to search for recipes and finally decided on combining methods from 2 recipes - and it was a success! Whole Wheat Bread Loaf: ingredients: - 2 1/2 cup whole wheat flour - 1 cup plus 2 tbsp water - 1 tsp yeast - 2 t tbsp oil (I used olive oil) - 1/4 tsp salt how to: - bloom yeast in lukewarm water about 5-10 mins or until frothy - add half cup of flour, mix until combined and set aside for about 30 mins. pudding new life to stale bread!

In this time where there can be shortage of food supplies, we can not afford for anything to go to waste - which is the norm in our household in any case. Today while checking out our ref I found 2 left over buns from last week's lunch. They were stale and hard but do not have any molds - I did not want to throw them out so I rummaged through the pantry for any other leftover stuff I could use to make bread pudding. I found a couple of merengue - I did not know of any recipe for bread pudding using merengue but what the heck, I will just throw it in there too instead of throwing it out... beefy buns

Nothing goes well with a big bowl of hot and hearty beef noodle soup than soft and fluffy steamed buns!  This dish reminds me of my childhood fascination of the vibrancy of a busy marketplace. During summer vacation, before going to work, my mom would take us to the market to buy our meals for the day and the corner noodle shop was often than not our main stop. We would order a couple of servings of beef noodles and steamed buns... I would often discreetly watch the people inside the shop - fascinated by the diversity of the patrons coming and going. There are families dinning out for a treat... couples maybe on a date... lone diners and working people like my mom dressed in office uniforms. Our take away package seems to come too quick for me to enjoy my time people watching and making my self dizzy going round and round on the bar stools. Puto-ing it healthier!

I am one with a big appetite. I love to eat … and though I try to be physically active with sports and exercise, part of taking care of oneself is watching what we eat. I try to make healthy food choices and tweak recipes to satisfy my cravings with a little less guilt. I have recently tried using whole wheat flour in baking and while I am yet to perfect breadmaking here's a healthier version of the beloved Filipino steamed cake we call PUTO! easy ube cupcake

I am still on a ube high! The last time I went grocery shopping, I kind of went crazy and  bought a lot of purple yam for my ube cheese pandesal project and now that I have successfully made those little cheesy babies I still have much ube left so its on to a new project! Ube Cupcakes Ingredients: 2 large eggs, room temperature ¾ cup sugar ½ cup vegetable oil 1 cup ube jam 1½ teaspoon ube flavoring 1 cup cake flour 1 teaspoon baking powder ½ teaspoon salt 1 cup ube jam thinned a bit with milk for frosting how to: - preheat oven to 325 F. and prepare cupcake pan with cupcake liners - in a large bowl beat eggs, sugar, oil and ube halaya - add to dry ingredients and mix just until incorporated - fill cupcake pan about 3/4 full and bake for 12 mins or until toothpick inserted comes out clean - frost with ube jam thinned a bit with milk until of spreading consistency. enjoy!

Coffee Craze

Jumping into the Dalgona coffee craze! it looks so rich and decadent that I had to try making it too! It's simplicity - all you need are equal parts coffee, sugar and hot water plus arm muscles if you are whipping it manually, makes is the perfect instant fancy coffee fix. The process was quite similar to what our office boy did to make cappuccino. Instead of putting coffee, sugar and creamer or milk into a cup of hot water, they would whisk it with a teaspoon until thick and creamy then slowly pure the hot water making the foam rise to the top. Oh how I miss afternoon coffee breaks at the office! Japanese Egg Sandwich Ingredients: - 3 soft boiled eggs, peeled - 1 1/2 tbsp. mayonnaise - 1/4 tsp Dijon mustard - 2 sliced sandwich bread - 1 cup shredded cabbage (wilted with a pinch of salt) *** optional - salt and pepper to taste how to: - chop 1 egg and combine with mayo, mustard, salt and pepper in a bowl - spread over a bread slice, top with the remaining 2 whole egg - top with wilted cabbage - cover with remaining bread slice pressing slightly to hold the shape. - slice and serve

the color purple

was lucky to have found purple yams on sale today during a quick grocery run for veggies, and was finally able to try making the trending ube cheese pandesal (purple yam and cheese buns)... was quite happy with the results but my taste tester said it could use a little more sweetness so I am making another batch when we finish this one.  Baking really does make me happy. The anticipation of waiting for the finished product to come out of the oven builds excitement, si nking your teeth into the finished product brings satisfaction of nailing the recipe and the delights of friends and family over the baked good brings warmth to the heart. I hope to master and perfect more recipes - maybe one day I will be good enough to make it a business! sweet and fruity dessert nachos

I have always been a sucker for dessert, I would eat it all day if calories and sugar were of no question and it was at a dessert buffet station that I discovered this sweet and crunchy treat! This finger licking treat is so addicting that I went back for seconds... thirds... fourths... and countless times over - gushing how it is the perfect combination of sweet, fruity and crunchy. It is super easy to make too!!! Dessert Nachos Ingredients: - small tortillas - melted butter - cinnamon sugar - diced strawberry, kiwi, apples - flavored youghurt - chocolate sauce how to: - brush tortillas with melted butter on both sides, cut into triangles - toss in cinnamon sugar - line in baking tray in single layer and bake for 5 mins, flipping halfway through - pile chips on serving plate and top with dices fruits, drizzle with chocolate sauce and top with youghurt

french it up!

make mornings extra special with French toast! I am up for anything that gives me an excuse to have something akin to dessert for every meal of the day, and French toast is one of my go to breakfast treats! You can fill it with cream cheese and blueberries; peanut butter and jam; chocolate - the options are endless! Ingredients: - 1 egg - 1 cup milk - 1 tsp vanilla - 1/2 tsp cinnamon - bread slices how to: - beat egg, milk, vanilla and cinnamon in a shallow dish - dip bread slices in egg mixture until coated on both sides - melt butter in a skillet and cook bread slices until browned on both sides. - serve and enjoy!

I've never met a cookie I didn't like, and yes I love even the 'healthy ones', and while a plate of freshly baked cookies brings comfort like a warm hug kicking your cookie up a notch is like a warm hug and a kiss on top of the head! Cookie Dome Cake Ingredients: - cookies - milk - chopped chocolate - 1 small pack all all purpose cream - nuts, sprinkles etc for topping how to: - heat cream in a small saucepan - pour over chocolate, let sit for a few minutes and stir until chocolate is melted and smooth. set aside - line bowl with cling wrap - dip cookies in milk and arrange in single layer in the bottom and along sides of the bowl - top with chocolate cream and your choice of toppings - alternate layers - chill for a few hours - invert unto a bowl and cover with remaining chocolate cream and toppings. yummeeehh!!!!
