fancy shmancy brekie

Whenever I get a day off work (like today yay!) I make myself some fancy breakfast. Well when I say fancy I meant something my brother does not normally eat - something sweet for breakfast like pancakes and french toast.
Today I made myself some banana chocolate pancakes. Pancakes I think is one of the most versatile breakfast items ever. You can make it sweet or savory, healthy or sinful, decadent or skinny from a box or from scratch.

I made them from a box, sweet and a bit sinful. I had some left over banana from a previous baking experiment that I wanted to use. I normally just slice the bananas and put them on top of the pancake but since they are a bit over ripe I roughly mashed them (I wanted some chunks) into the batter and omitted the egg instead.

I added some chocolate chips of course but opted to sprinkle them on top - sandwiching them in  between pancakes instead of throwing then into the batter. I did not want the chocolate melting and scorching into the pan so I decided to do it like so - this way the chocolate melts in between the pancakes and you have sort of a self saucing pancake!

Chocolate Banana Pancakes
ingredients:
- 1 cup pancake mix
- 2 medium sized banana
- 1 tbsp oil
- 1/2 to 1 cup of milk
- chocolate chips or morsels
- butter for cooking

how to:
- mash the bananas in a bowl
- add the pancake mix
- add the oil and gradually add the milk until batter is of right consistency
- heat a non stick pan or griddle melt some butter into it and laddle the batter into the pan
- flip the pancakes over when bubbly on top
- stack the pancakes sprinkling chocolate in between

dressing up desserts

I had just purchased a half gallon tub of ice cream and wanted to dress it up by making waffle cups. I knew it is made of the same batter as pancakes but without a waffle cone or cup maker I have a general idea on how I can make it into a basket shape and make it crispy. So I started by making pancake batter (again feeling lazy I used boxed mix) and thinned it bit with a little more milk. I cooked them as you would a pancake but since it was a thin batter you have to be careful in flipping it as it is more delicate.  When it has cooked I arranged them on an inverted slightly greased muffin pan then I bake them at 100 degrees until they were crispy - I did not want to bake them at higher temperature for fear of burning them so I baked at a lower temperature for longer time. dessert time!!!!
