Bread making is one of the things I would love to master. I love the smell of freshly baked bread and it is such a wonder to me that a simple base of flour, yeast and water can be flavored into many different things from savory to sweet. The very first time I made something 'bread like' was pizza crust - I don't know if it can be considered a type of bread but lets just say it is haha!

I had just been given a handheld mixer from my aunt who got it as a wedding gift but had never used it. It had various attachements including a dough hook and so I searched for a basic pizza crust recipe and experimented in the kitchen with my dad. The crust (as I remember) was very good considering it was our first time making it. I guess the mixer and the added muscle power from my dad in the kneading process made the dough just right.

I was in the mood of making pizza again from scratch and had found a new way to present it via Pinterest. Instead or making a round pizza, it suggested making pizza bites.

Pizza Bites

Basic Pizza Dough
Ingredients:
- 1 1/2 tsp active dry yeast
- 1 teaspoon white sugar
- 1 cup warm water (110 degrees F/45 degrees C)
- 2 1/2 all purpose flour         
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon italian herbs seasoning or any dried herb seasoning of you choice     
- pizza sauce
- any filling of your choice - ham, cheese, onions, bell pepper, salami               
   
How to:
- Preheat oven to 450 degrees F (230 degrees C). In a medium bowl, dissolve yeast and sugar in warm water. Let stand until creamy, about 10 minutes.    
- Stir in flour, salt and oil. Beat until smooth. Let rest for 5 minutes.      
- meanwhile prepare your fillings, cut the meat and cheese into bite size pieces and roughly chop your veggies
- Turn dough out onto a lightly floured surface and pat or roll into a round. 
- cut into golf sized balls and flatten into a disk          
-  spoon a bit of pizza sauce into the dough disk - for this step I used ketchup in packets! i didn't have pizza sauce on hand and squeezing ketchup from a packet proved very convenient!
- place fillings in the center and carefully seal into a ball
- place balls into greased baking pan  and bake into the preheated oven for 15 to 20 minutes or until tops are golden brown

 The Italian Herbs gave the dough a wonderful aroma

getting Stuffed!

I my house no leftovers are never wasted - we dress them up or 'reinvent' them into new dishes for the next meal, such is the case when I made these stuffed bell peppers. I had a couple of cups of  leftover rice in the fridge along with a slice of steak and mixed veggie sidings from the steak dinner we had the previous night. I wanted to make it like a java rice but didn't have the turmeric powder needed to color the rice yellow so I used the curry powder I had instead and liked the mild spicyness flavor it gave the rice.
