egg-citing experiment!

Egg crates have always struck me as a good chocolate mould. Whenever I go and get those 6pcs box I always think that I should keep it but never did until yesterday. My friend had invited me to go have lunch with her as my post birthday treat (first week into march - I had my birthday two weeks ago - and am still getting birthday treats! ain't it great!?). I wanted to give her something as a treat too and finally made caramel filled chocolate jewels using plastic egg crates - I washed them real good first of course! I can't give the exact recipe for these as I just eyeballed it. But all you need is chocolate melted with a bit of shortening and whatever filling you want, the caramel I melted on a double boiler with gradual additions of milk until I achieved the desired consistency.  pour the melted chocolate into the mold and spread up to the sides keep in the fridge for a few minutes to set  melt the caramel as well  then pour the caramel into the center  comp...

frosting crazy

I can not believed I have survived a year of baking without a proper set of measuring spoons. I had lost the 1 tbsp and 1 tsp of the set and I have been getting along by the use of conversion. Today is one such day that I decided to make a cake and assembled all the ingredients only to remember I haven't got a proper measuring spoon - so convert away I did. The cake turned out very very moist - maybe I had made a wrong calculation about the liquids in the recipe for Cappuccino Bundt Cake . It may not be perfect but hey it's still edible! I had a surplus of caramels, so I melted that with a few tablespoons of milk and drizzled it over the cooled cake. Then remembering how the caramel tasted good with chocolate from the last time I made Caramel apples, I decided to melt some chocolate and drizzle it on the cake too. You'd have thought at stop there but no! - I added some glaze to! caramel, chocolate and sugar glazed choco cake, something for the sweet tooth indeed!...

Sticky valentines

I had surely made a batch of brownies with a prinkling of candy hearts and sugar crystals but this day of hearts but I'd rather blog about my housemate's homemade tikoy or Nian Gao or Chinese New Year Cake. TIkoy's are traditionally given during the Chinese New Year celebration, packaged in red boxes with gold prints it is prepared by slicing it into bite squares, dipping in beaten egg and fried in butter. As a child it is something I look forward to (my mom is half chinese and we get a number of boxes each year) because it's not everyday that we get to fry these soft, chewy and sticky sweet treats but even then I must say that even few bites of these treats can be overwhelming - I blame it on the excess oil which seem to seep in the tikoy no matter how hard I try to pat off with paper towels. goin' bananas

everyone who visits Tagaytay would surely come home with a number of pineapples, buko (coconut) pies and that big bunches of mini bananas. The morning after my brother went on an impromptu trip to Tagaytay with his friends we woke up to find pineapples and bananas in the kitchen. For a couple of days we enjoyed fresh fruits in the morning and pretty much the whole day. By the end of the week though the bananas we getting a tad to ripe and after a trip to a Chocolate making supplies store I decided to dip the bananas in melted chocolate and freeze it to dress it up for dessert!!! Frozen Chocolate Bananas Ingredients: - bananas - melting chocolate - shortening - sprinkles How to: - melt chocolate as per package directions - dip bananas in melted chocolate - place in wax paper until chocolate firms up - decorate with sprinkles of your choice and freeze fruity chocolate goodness!

potato potato!!!

wanted something akin to potato chips for our chicken dinner but was weary of frying because first I was hungry and wanted something fast - frying takes soo much time and second I didn't want any more oil into our meal so I made these: Hasselback Potato Ingredients: 2 large potatoes salt pepper butter How to: - slice washed potatoes across without going all the way through about a quarter of inch apart - microwave potatoes on high for 15-20 minutes depending on your oven wattage or until fork tender - smear with butter and season with salt and pepper - bake a few minutes in a 375 degree oven until tops are nicely browned    perfect with southern fried chicken!!! You can bake it directly in the oven, seasoning between two or three intervals if you have time, but microwaving it saves time so you can get to your chicken dinner faster!

tale of the coonies!

… adapted from various versions of no bake cookies – I 'developed' my own recipe making use of surplus glucose cookies, milk and chocolates… … these treats are called “coonnies”. Named after my friend connie – they are a cross between brownies and cookies, depending on how you bake them – they can be baked in a pan and cut into squares which would make them like brownies or you can drop them by the spoonfuls onto baking sheets which will make them like cookies.   … well this is more of a guide than a recipe because when I make these easy chocolatey treats I just play it by hand – I can’t give you the exact measurements or cooking time and the ingredients differ according to what you want to put in!!!   … you can get really creative with it! – you can add any type of nuts you want, you can add a bit of coffee for added flavor, you can bake them either crunchy or chewy, chunky or smooth… no restrictions!! … We – that is to say connie’s then boyfriend now husba...
